Method of preparation
Prepare the tempura dough. Beat egg in a bowl with salt, pepper and spices. Mix baking powder with flour and add in beaten egg, then pour mineral water and beat the composition with a whisk. Gradually add the oil, stirring continuously, to incorporate it into the dough.
Pieces of vegetables should be washed and dried well before being rolled into the dough and fried in a hot oil bath. Remove and place them on a grill (to drain the fat from them), so that they remain crisp. If you remove the paper towels and put them on top of each other, they tend to soften very quickly.
